Instantaneous Pot Hen Tacos

Substances:

  • 2 kilos boneless, skinless rooster thighs
  • Kosher salt and freshly floor black pepper, to style
  • 1 tablespoon canola oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon floor cumin
  • 1 teaspoon dried oregano
  • 1 cup restaurant-style salsa
  • 1/2 cup Mexican beer, similar to Modelo*

For serving

  • Tortillas (flour or corn)
  • Pico de gallo
  • Sliced avocado
  • Sliced jalapeños

Instructions:

  1. Set a 6-qt Instantaneous Pot® to the excessive saute setting.
  2. Season rooster with 1 1/4 teaspoon salt and three/4 teaspoon pepper. Warmth canola oil; working in batches, add rooster and cook dinner till golden brown, about 3-4 minutes per aspect; put aside.
  3. Add onion, and cook dinner, stirring continuously, till translucent, about 2-3 minutes. Stir in garlic, chipotle chili powder, cumin and oregano till aromatic, about 1 minute.
  4. Stir in salsa and beer, scraping any browned bits from the underside of the pot.
  5. Return rooster to the pot and gently toss to mix.
